Ingredients

  • -400g gnocchi
  • -350g cherry tomatoes
  • -200g feta cheese
  • -3 garlic cloves
  • chilli flakes
  • -salt
  • -pepper
  • -a small bunch of fresh basil
  • -extra virgin olive oil
  • -60g Parmigiano cheese

Instructions

    In an oven dish, add your cherry tomatoes, feta, garlic cloves, a pinch of salt, pepper, chilli flakes, some freshly chopped basil and a drizzle of extra virgin olive oil.

    Cover with aluminium foil and bake in the oven for about 30 minutes (180C/360F).

    Remove the foil for the last 5 mins.

    Add your baked feta and tomatoes in a food processor and mix everything until creamy.

    In the meantime, boil your gnocchi in some salted water for the time indicated on the package or until they come to surface. Drain.

    Mix your boiled gnocchi with your tomatoes and feta sauce, adding your Parmigiano cheese to make it “mamma mia”!
