Ingredients

  • 8 cardamom pods
  • 1 small cinnamon stick
  • 4 cloves
  • small grating of nutmeg
  • 1 teaspoon fennel seeds
  • 3 bay leaves
  • large pinch of saffron strands
  • 1-2 teaspoons rosewater (optional)
  • 4 tablespoons ghee, butter or coconut oil
  • 4 onions, peeled and thinly sliced
  • small thumb-sized piece of fresh ginger, peeled and finely chopped
  • 3 cloves of garlic, peeled and finely chopped
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon garam masala
  • 400g root vegetables, such as carrot, butternut squash and potato, grated
  • 2 sprigs of mint, leaves picked and roughly chopped
  • small bunch coriander, roughly chopped
  • 300g basmati rice
  • 50g flaked almonds
