  • 500g skinless boneless chicken thighs, cut into chunks
  • 150g full-fat Greek-style yoghurt
  • Juice of 1 lemon
  • 1tsp ground cumin
  • 1 tsp garam masala
  • 2 tsp smoked paprika
  • 20g unsalted butter
  • 1 tsp garlic-infused olive or sunflower oil
  • 1 onion finely diced
  • 3 tbsp tomato puree
  • 3 garlic cloves grated
  • thumb sized piece of ginger, peeled and grated
  • 2 tsp garam masala
  • 1 low-salt chicken stock cube
  • 100g full-fat Greek-style yoghurt or double cream
  • Non-stick baking paper
  • Basmati rice
