Ingredients

  • 1.5tbsp Caribbean curry powder or normal curry powder
  • 4 skinless, boneless chicken thighs, cut into bite-sized pieces
  • 1 tbsp coconut oil
  • 1 onion, finely chopped
  • sprig of thyme
  • 1 bay leaf
  • 1 clove garlic, minced
  • 1tsp minced ginger
  • 0.5tsp allspice powder
  • 4 plum tomatoes, roughly chopped
  • 400ml tin coconut milk
  • 400g frozen cubed butternut squash
  • juice of 0.5 lime
  • 6 spring onions, roughly chopped
  • small bunch of coriander, roughly chopped
  • rice to serve
