- 1 tablespoon coconut or vegetable oil
- 200g tempeh or firm tofu, chopped into bite sized pieces
- 1 small onion or 2 banana shallots, peeled and finely chopped
- thumb-sized piece of ginger, peeled and roughly chopped
- 2 cloves of garlic, finely chopped
- 1/4 teaspoon ground turmeric or a small piece of fresh turmeric, peeled and grated
- 350g cooked basmati rice
- 2 tablespoons soy sauce
- 1 tablespoon sambal oelek or chilli oil (depending on heat of chilli oil)
- 2 carrots, peeled and grated
- 1/2 cabbage or 2 large handfuls of other green veg
- 2 organic eggs (optional)
- juice of 1 unwaxed lime
- a small bunch of fresh coriander, roughly chopped
- 100g roasted unsalted peanuts, chopped
- 2 spring onions, thinly sliced
- a small handful of crispy shallots
- 1 tablespoon ketjap manis (or 50/50 mix of soy sauce and honey)
