Ingredients

  • 1 tablespoon coconut or vegetable oil
  • 200g tempeh or firm tofu, chopped into bite sized pieces
  • 1 small onion or 2 banana shallots, peeled and finely chopped
  • thumb-sized piece of ginger, peeled and roughly chopped
  • 2 cloves of garlic, finely chopped
  • 1/4 teaspoon ground turmeric or a small piece of fresh turmeric, peeled and grated
  • 350g cooked basmati rice
  • 2 tablespoons soy sauce
  • 1 tablespoon sambal oelek or chilli oil (depending on heat of chilli oil)
  • 2 carrots, peeled and grated
  • 1/2 cabbage or 2 large handfuls of other green veg
  • 2 organic eggs (optional)
  • juice of 1 unwaxed lime
  • a small bunch of fresh coriander, roughly chopped
  • 100g roasted unsalted peanuts, chopped
  • 2 spring onions, thinly sliced
  • a small handful of crispy shallots
  • 1 tablespoon ketjap manis (or 50/50 mix of soy sauce and honey)
