Ingredients

  • 1.5tbsp garlic infused olive oil
  • 3 skinless chicken breasts, sliced into 1cm strips
  • 2 banana shallots, halved and thinly sliced
  • 1tbsp tomato puree
  • 2 large garlic cloves, finely grated
  • 2cm piece fresh ginger, peeled and finely grated
  • 500g cooked basmati rice, equal to about 170g uncooked
  • 3 tbsp low salt soy sauce
  • juice of 1 lime
  • 2 eggs, beaten
  • freshly ground black pepper
  • 2 spring onions, thinly sliced
  • 0.5 cucumber, cut into wedges
  • 3 salad tomatoes, cut into wedges
