Chicken goujons with caramelized lemons

Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons clear honey, warmed
- juice and grated zest of 1 lemon
- 1.5 tablespoons oil
- 2 tablespoons sesame seeds
- 2 lemons, cut into wedges
- 4 teaspoons caster sugar
- 15 g unsalted butter
- salt and freshly ground black pepper

Heat the oven to 200°C/400°F/gas mark 6.

Cut the chicken into 1cm strips and place in a large bowl.

Pour over the honey, lemon juice and zest. Season with salt and pepper. Toss to coat well.

Heat the oil in a roasting pan and add the chicken.

Bake for 15 minutes.

Sprinkle over the sesame seeds and bake for a further 5 minutes, or until the chicken is cooked through and the sesame seeds are nicely browned.

Meanwhile , place the lemon wedges in a separate roasting pan and sprinkle over the sugar.

Dot with the butter and bake alongside the chicken, basting occasionally, until well caramelized.

Pile the chicken goujons on to a warmed serving dish and surround with the lemon wedges.
