Fried Courgette with Roasted Peppers, Peanuts and Chilli

Ingredients

  • 3 large courgettes, halved lengthways
  • 3 tsbp olive oil
  • 300g roasted red peppers, from a jar, drained and thinly sliced
  • 4 garlic cloves, crushed
  • 2 tsp cumin seeds
  • 2 tbsp soy sauce
  • 2 tsp rice vinegar
  • 1 tsp dried chilli flakes
  • Small handful of Thai basil, leaves only, roughly chopped
  • Small handful of roasted peanuts (salted or unsalted), roughly chopped
  • Brown rice or quinoa

Instructions

    Cut the courgette into 1 cm slices on an angle. Put the olive oil in a large pan and set over a high heat. When very hot, add the courgette and stir-fry for 2 minutes. Add the red peppers and fry for another 2-3 minutes, until the courgette is golden

    Turn down the heat, add the garlic and cumin seeds and fry for another 1-2 minutes until aromatic. Add the soy sauce, rice vinegar, chilli, basil and peanuts and toss to combine. Season to taste

    Serve immediately with brown rice or quinoa
