Ingredients
- 3 large courgettes, halved lengthways
- 3 tsbp olive oil
- 300g roasted red peppers, from a jar, drained and thinly sliced
- 4 garlic cloves, crushed
- 2 tsp cumin seeds
- 2 tbsp soy sauce
- 2 tsp rice vinegar
- 1 tsp dried chilli flakes
- Small handful of Thai basil, leaves only, roughly chopped
- Small handful of roasted peanuts (salted or unsalted), roughly chopped
- Brown rice or quinoa
Instructions

Cut the courgette into 1 cm slices on an angle. Put the olive oil in a large pan and set over a high heat. When very hot, add the courgette and stir-fry for 2 minutes. Add the red peppers and fry for another 2-3 minutes, until the courgette is golden

Turn down the heat, add the garlic and cumin seeds and fry for another 1-2 minutes until aromatic. Add the soy sauce, rice vinegar, chilli, basil and peanuts and toss to combine. Season to taste

Serve immediately with brown rice or quinoa
