  • 1 vegetable stock pot
  • 100g bulgur wheat
  • 2 salmon fillets, about 150g each
  • olive oil
  • 1 red onion, thin half moons
  • 1 tbsp red wine vinegar
  • 1 garlic clove, finely chopped
  • 0.5 cucumber, half moons
  • 3tbsp fresh mint, finely chopped
  • 3 tbsp fresh flat leaf parsley, finely chopped
  • 3tbsp fresh coriander, finely chopped
  • 1 lemon, zest & juice
  • 1.5 tsp tahini
  • 150ml creme fraiche
  • 4tbsp walnuts, crushed
  • 1 red chilli, finely chopped
  • salt and black pepper
