- 1 onion, 0.5cm dice
- 1 garlic clove, finely chopped
- 3 tbsp fresh flat leaf parsley, roughly chopped
- 250g good pork sausages
- 80g parmesan, grated
- Olive oil
- 2-3 tbsp butter
- 175g arborio risotto rice
- 1tsp fennel seeds
- 2 tbsp white wine vinegar or 4 tbsp white wine (optional)
