  • olive or groundnut oil
  • 2 teaspoons black mustard seeds
  • 2 red onions, peeled and finely sliced
  • a thumb-size piece of fresh ginger, peeled and finely chopped
  • 2 cloves of garlic, peeled and sliced
  • 1 red chilli, roughly chopped
  • 1 teaspoon cumin seeds
  • 1 teaspoon ground turmeric
  • 700g waxy potatoes, washed and cut into rough 1cm cubes
  • 1 head of chard (about 300g), leaves roughly chopped, stalks cut into 1cm slices
  • sea salt
  • 1 unwaxed lemon
  • a small bunch of fresh coriander, chopped
  • mango chutney
  • natural yoghurt
  • warmed Indian breads (chapattis or roti)
