  • 1 yellow pepper, 2cm dice
  • Olive oil
  • 1 vegetable stock pot
  • 150g buckwheat
  • 1 red onion, 0.5cm dice
  • 1 green chilli, finely chopped
  • 1 garlic clove, finely chopped
  • 2 tbsp fresh chives, finely chopped or snipped
  • 1 tin black beans, drained and rinsed
  • 0.75tsp ground cumin
  • 0.75tsp paprika
  • 0.5tsp cayenne pepper
  • 0.75tsp ground cinnamon
  • 100ml creme fraiche
  • 60g cheddar, grated
