  • 0.5 cup rock salt
  • 2.5 cups water
  • 1 cup apple juice
  • 1 clove garlic, peeled & smashed
  • 0.5 cup fresh sage leaves, torn into pieces
  • 0.5 tsp black peppercorns
  • 4 cups ice
  • 1 chicken (about 4 pounds/1.8kg), cut into 8 pieces
  • rapeseed oil, for frying
  • 0.75 tsp salt
  • 0.5 tsp freshly ground black pepper
  • 3 cups plain flour
  • fresh sage leaves, for garnish
  • 2 tablespoons lard (from fried chicken)
  • 1 cup finely chopped sweet onion
  • 2 cups finely chopped tomatoes
  • 1/2 teaspoon salt
  • 1 teaspoon fresh thyme chopped
  • 1/4 teaspoon of freshly ground pepper
  • 1/2 cup milk
  • 2 tablespoons of plain flour
  • 1 tablespoon of cornflour
