- olive oil
- 1 red onion, 0.5cm dice
- 1 red pepper, 1cm dice
- 2 garlic cloves, crushed or finely chopped
- 1tbsp fresh ginger, peeled and finely chopped
- 0.5tsp ground turmeric
- 150g basmati rice
- 1 vegetable stock pot
- 3 spring onions, 0.5cm discs
- 3tbsp fresh coriander, roughly chopped
- 200g cherry tomatoes, quartered
- 0.5tsp nigella seeds
- 150g greek yoghurt
