  • 1 aubergine, quartered lengthways
  • 1tbsp tandoori spice mix
  • olive oil
  • 1 red onion, 0.5cm dice
  • 1 red pepper, 1cm dice
  • 2 garlic cloves, crushed or finely chopped
  • 1tbsp fresh ginger, peeled and finely chopped
  • 0.5tsp ground turmeric
  • 150g basmati rice
  • 1 vegetable stock pot
  • 3 spring onions, 0.5cm discs
  • 3tbsp fresh coriander, roughly chopped
  • 200g cherry tomatoes, quartered
  • 0.5tsp nigella seeds
  • 150g greek yoghurt
