- 1-2 tbsp vegetable oil
- 6 cloves of garlic, finely chopped
- 3 shallots, finely chopped
- 450g pork fillet/tenderloin, trimmed and cut into bite sized pieces
- 4 thai red chillies, chopped and punched into a paste
- 2 kaffir lime leaves, finely diced
- 0.5 tsp caster sugar
- 2 tbsp dark soy sauce or oyster sauce
- 2 tablespoons fish sauce
- 1 bunch of fresh Thai basil, shredded
- freshly ground white or black pepper
- Noodles
Instructions

Heat the oil in a wok and add the garlic.

Stir in the shallots, then the pork.

Cook for 2-3 minutes, or until cooked through.

Stir in the chilli paste, kaffir lime leaves, sugar, soy sauce, fish sauce and Thai basil.

When the basil has wilted, grind over the pepper and serve.
