Ingredients

  • 1-2 tbsp vegetable oil
  • 6 cloves of garlic, finely chopped
  • 3 shallots, finely chopped
  • 450g pork fillet/tenderloin, trimmed and cut into bite sized pieces
  • 4 thai red chillies, chopped and punched into a paste
  • 2 kaffir lime leaves, finely diced
  • 0.5 tsp caster sugar
  • 2 tbsp dark soy sauce or oyster sauce
  • 2 tablespoons fish sauce
  • 1 bunch of fresh Thai basil, shredded
  • freshly ground white or black pepper
  • Noodles

Instructions

    Heat the oil in a wok and add the garlic.

    Stir in the shallots, then the pork.

  3. 3

    Cook for 2-3 minutes, or until cooked through.

    Stir in the chilli paste, kaffir lime leaves, sugar, soy sauce, fish sauce and Thai basil.

    When the basil has wilted, grind over the pepper and serve.
